Ever had leftover ground turkey that you just didnt know what to do with? Well this week I threw it on the bottom of a muffin tin along with some fresh spinach, onion, one whole egg and one egg white. Add a sprinkle of cheese. Bake at 350 degrees for 25-30 min and TADA! Banana Protein Pancakes

Not only are these pancakes delicious, but just four of them will give you nearly 20g of protein! Eat them alone on the go or add some scrambled eggs and a slice or two of turkey bacon for a perfectly healthy meal that will keep you satisfied for hours. (Yes, I used “bacon” and “healthy” in the same sentence! If someone tells you not to eat bacon you should cut them off immediately… you don’t need that kind of negativity in your life.)   banana protein pancakes Ingredients ✔ 2 cups Old Fashioned Oatmeal ✔ 2 scoops Terra’s Whey Bourbon Vanilla protein powder ✔ 1 TBSP Cinnamon ✔ 1.5 tsp Baking Powder ✔ 2.5 cups Silk Coconut/Almond Blend ✔ 1 tsp Vanilla Extract ✔ 1 Ripe Banana ✔ 1 Large Egg

Grind the oatmeal in a food processor. Add the dry ingredients together. Mash the banana and mix the rest of the ingredients together. Spray pan with coconut oil. Place ¼ cup servings of batter onto heated pan and wait until you see the bubbles to flip (just like “regular” pancakes).

It’s THAT simple!
